Here’s a classic potato hash—crispy, hearty, and super flexible 🥔🔥

Classic Potato Hash

Ingredients

  • 2–3 cups potatoes, diced (russet or Yukon gold)
  • 1 small onion, diced
  • 1 bell pepper, diced (optional)
  • 2 tbsp oil or butter
  • Salt & black pepper
  • ½ tsp paprika or garlic powder
  • Optional add-ins: bacon, sausage, ham, leftover chicken
  • Optional topping: fried or poached eggs

Instructions

  1. Parboil potatoes in salted water 5–7 minutes until just tender. Drain well.
  2. Heat oil/butter in a skillet over medium-high heat.
  3. Add potatoes in a single layer. Don’t stir for 3–4 minutes (let them crisp).
  4. Add onion and peppers. Stir and cook until golden and crispy.
  5. Season with salt, pepper, and spices.
  6. Add any cooked meat and heat through.
  7. Serve hot, topped with eggs if desired.

Tips for Extra Crispiness

  • Dry potatoes well after boiling
  • Use a cast-iron skillet
  • Don’t overcrowd the pan
  • Finish with a knob of butter

Variations

  • Breakfast hash: Add sausage + eggs
  • Cheesy hash: Sprinkle cheddar at the end
  • Spicy: Add chili flakes or hot sauce
  • Sweet potato hash: Swap in sweet potatoes
