Chicken Soup
Ingredients (serves ~6)
- 1β1.5 lb chicken (breasts, thighs, or a mix; bone-in adds flavor)
- 8 cups chicken broth or water
- 2β3 carrots, sliced
- 2β3 celery stalks, sliced
- 1 small onion, diced
- 2β3 cloves garlic, minced
- 1 tsp dried thyme (or 2β3 sprigs fresh)
- 1 bay leaf
- Salt & pepper, to taste
- Optional: 1 cup noodles, rice, or small pasta
- Optional: fresh parsley for garnish
Instructions
- Cook chicken
In a large pot, add chicken, broth/water, onion, carrots, celery, garlic, thyme, and bay leaf.
Bring to a boil, then reduce to a simmer for 30β40 minutes (or until chicken is cooked through). - Remove chicken
Take out chicken and shred or dice it. Discard bones if using bone-in. - Simmer veggies
Keep soup simmering until vegetables are tender (10β15 minutes). - Add noodles (optional)
Add pasta or rice and cook until tender. - Return chicken
Stir chicken back in. Season with salt & pepper. - Serve
Garnish with fresh parsley if desired.
Tips
- Use leftover roast chicken for a shortcut.
- Add a squeeze of lemon for brightness.
- Freeze leftovers in portions for easy meals.
