Chicken Soup

Ingredients (serves ~6)

  • 1–1.5 lb chicken (breasts, thighs, or a mix; bone-in adds flavor)
  • 8 cups chicken broth or water
  • 2–3 carrots, sliced
  • 2–3 celery stalks, sliced
  • 1 small onion, diced
  • 2–3 cloves garlic, minced
  • 1 tsp dried thyme (or 2–3 sprigs fresh)
  • 1 bay leaf
  • Salt & pepper, to taste
  • Optional: 1 cup noodles, rice, or small pasta
  • Optional: fresh parsley for garnish

Instructions

  1. Cook chicken
    In a large pot, add chicken, broth/water, onion, carrots, celery, garlic, thyme, and bay leaf.
    Bring to a boil, then reduce to a simmer for 30–40 minutes (or until chicken is cooked through).
  2. Remove chicken
    Take out chicken and shred or dice it. Discard bones if using bone-in.
  3. Simmer veggies
    Keep soup simmering until vegetables are tender (10–15 minutes).
  4. Add noodles (optional)
    Add pasta or rice and cook until tender.
  5. Return chicken
    Stir chicken back in. Season with salt & pepper.
  6. Serve
    Garnish with fresh parsley if desired.

Tips

  • Use leftover roast chicken for a shortcut.
  • Add a squeeze of lemon for brightness.
  • Freeze leftovers in portions for easy meals.
