Slow-Cooked Beef Tips
Ingredients
- 2 lbs beef stew meat (chuck or sirloin tips)
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 8 oz mushrooms, sliced (optional)
- 1 cup beef broth
- ½ cup red wine (optional, can replace with extra broth)
- 2 tbsp Worcestershire sauce
- 1 tsp dried thyme
- 1 tsp paprika
- Salt & black pepper, to taste
- 2 tbsp flour (or cornstarch for gluten-free) for thickening
- 2 tbsp oil for searing
Instructions
- Sear the beef: Heat oil in a skillet over medium-high heat. Brown beef on all sides (you can skip this, but it adds flavor). Transfer to slow cooker.
- Sauté onions & garlic: In same skillet, cook onions and garlic until softened. Add mushrooms if using. Transfer to slow cooker.
- Add liquids & seasonings: Pour in beef broth, wine, Worcestershire sauce, thyme, paprika, salt, and pepper. Stir to combine.
- Cook: Cover and slow cook on low 7–8 hours or high 4–5 hours, until beef is very tender.
- Thicken (optional): Mix flour with a small amount of cold water to make a slurry. Stir into slow cooker 30 minutes before serving, or remove beef, thicken in a pan, and return beef.
- Serve: Over mashed potatoes, rice, or egg noodles. Garnish with parsley if desired.
