Apple cake

Here’s a simple, moist apple cake that works great as a snack cake or dessert.

Easy Apple Cake

Ingredients

  • 2 cups apples, peeled and diced (about 2 medium apples)
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • ¼ tsp nutmeg (optional)
  • ½ tsp salt
  • ½ cup sugar
  • ½ cup brown sugar
  • 2 eggs
  • ½ cup vegetable oil (or melted butter)
  • 1 tsp vanilla extract
  • ¼ cup milk or yogurt
  • (Optional) ½ cup chopped walnuts or raisins

Instructions

  1. Preheat oven to 350°F / 175°C. Grease or line an 8-inch (20 cm) square or round pan.
  2. Mix dry ingredients: flour, baking soda, cinnamon, nutmeg, and salt.
  3. Whisk wet ingredients: sugars, eggs, oil, vanilla, and milk/yogurt until smooth.
  4. Combine wet and dry ingredients just until mixed.
  5. Fold in apples (and nuts/raisins if using).
  6. Bake for 35–45 minutes, until a toothpick comes out clean.
  7. Cool slightly before slicing.

Optional Toppings

  • Dust with powdered sugar
  • Simple glaze: powdered sugar + a little milk + vanilla
  • Serve warm with vanilla ice cream or custard

Tips

  • Best apples: Granny Smith, Honeycrisp, or Braeburn
  • For extra moisture, replace ¼ cup oil with applesauce.
  • Add a crumb topping if you want a coffee-cake style version.
