Easy Apple Cake
Ingredients
- 2 cups apples, peeled and diced (about 2 medium apples)
- 2 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp cinnamon
- ¼ tsp nutmeg (optional)
- ½ tsp salt
- ½ cup sugar
- ½ cup brown sugar
- 2 eggs
- ½ cup vegetable oil (or melted butter)
- 1 tsp vanilla extract
- ¼ cup milk or yogurt
- (Optional) ½ cup chopped walnuts or raisins
Instructions
- Preheat oven to 350°F / 175°C. Grease or line an 8-inch (20 cm) square or round pan.
- Mix dry ingredients: flour, baking soda, cinnamon, nutmeg, and salt.
- Whisk wet ingredients: sugars, eggs, oil, vanilla, and milk/yogurt until smooth.
- Combine wet and dry ingredients just until mixed.
- Fold in apples (and nuts/raisins if using).
- Bake for 35–45 minutes, until a toothpick comes out clean.
- Cool slightly before slicing.
Optional Toppings
- Dust with powdered sugar
- Simple glaze: powdered sugar + a little milk + vanilla
- Serve warm with vanilla ice cream or custard
Tips
- Best apples: Granny Smith, Honeycrisp, or Braeburn
- For extra moisture, replace ¼ cup oil with applesauce.
