Tuna and Potato Fritters

Ingredients

  • 2 cups mashed potatoes (preferably cooled)
  • 1 can (5 oz) tuna, drained
  • 1 small onion, finely chopped
  • 1 egg, beaten
  • 2–3 tbsp flour (or as needed)
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ tsp paprika (optional)
  • 2–3 tbsp fresh parsley or chives, chopped
  • Oil for frying

Instructions

  1. Prepare the mixture
    • In a large bowl, combine mashed potatoes, tuna, onion, egg, flour, salt, pepper, paprika, and herbs.
    • Mix until well combined. The mixture should hold together; add a bit more flour if too wet.
  2. Shape fritters
    • Take small portions and form into patties (about 2–3 inches wide).
  3. Fry
    • Heat oil in a skillet over medium heat.
    • Fry fritters 3–4 minutes per side until golden brown and crispy.
  4. Drain & serve
    • Place on paper towels to remove excess oil.
    • Serve warm with sour cream, tartar sauce, or a squeeze of lemon.
