Stuffed pepper soup

Here’s a hearty, easy stuffed pepper soup—all the flavors of stuffed peppers, no stuffing required 🥣


Stuffed Pepper Soup

Ingredients

  • 1 lb ground beef (or turkey)
  • 1 tbsp olive oil (if needed)
  • 1 medium onion, diced
  • 3 bell peppers (red/green/yellow), chopped
  • 3 cloves garlic, minced
  • 1 (28 oz) can crushed tomatoes
  • 1 (14.5 oz) can diced tomatoes
  • 4 cups beef broth (or chicken broth)
  • 1 tsp salt (adjust to taste)
  • ½ tsp black pepper
  • 1 tsp paprika
  • 1 tsp Italian seasoning
  • ½ tsp dried oregano
  • ½ tsp sugar (optional, balances acidity)
  • 1 cup cooked rice (white or brown)

Instructions

  1. Brown the meat
    • In a large pot, cook ground beef over medium heat until browned. Drain excess fat if needed.
  2. Sauté vegetables
    • Add onion and bell peppers. Cook 4–5 minutes until softened.
    • Stir in garlic, cook 30 seconds.
  3. Build the soup
    • Add crushed tomatoes, diced tomatoes, broth, salt, pepper, paprika, Italian seasoning, oregano, and sugar.
  4. Simmer
    • Bring to a boil, reduce heat, and simmer 25–30 minutes.
  5. Add rice
    • Stir in cooked rice and simmer 5 more minutes.
  6. Serve
    • Taste and adjust seasoning. Serve hot.

Tips & Variations

  • 🌶️ Add red pepper flakes for heat
  • 🧀 Top with shredded cheese or Parmesan
  • 🥬 Use cauliflower rice for low-carb
  • 🍗 Swap beef for ground chicken or sausage
  • 🫑 Green peppers = classic, red/yellow = sweeter
