Here’s a simple, classic Muffin recipe 🧁 — soft, fluffy, and easy to customize with your favorite mix-ins.


Basic Muffin Recipe

Ingredients (makes 12 muffins):

  • 2 cups all-purpose flour
  • ¾ cup sugar
  • 2 tsp baking powder
  • ½ tsp salt
  • 1 cup milk
  • ⅓ cup vegetable oil or melted butter
  • 1 large egg
  • 1 tsp vanilla extract

Optional mix-ins (choose 1–2):

  • Blueberries
  • Chocolate chips
  • Chopped nuts
  • Banana slices
  • Apple chunks + cinnamon

Instructions:

  1. Preheat oven:
    375°F (190°C). Line or grease a 12-cup muffin tin.
  2. Mix dry ingredients:
    In a large bowl, whisk flour, sugar, baking powder, and salt.
  3. Mix wet ingredients:
    In another bowl, whisk milk, oil (or butter), egg, and vanilla.
  4. Combine:
    Add wet ingredients to dry ingredients. Stir just until combined (don’t overmix).
  5. Fold in mix-ins:
    Gently fold in your chosen add-ins.
  6. Fill cups:
    Divide batter evenly, filling cups about ¾ full.
  7. Bake:
    Bake 18–22 minutes until a toothpick inserted comes out clean.
  8. Cool:
    Cool 5 minutes in pan, then transfer to a rack.

⭐ Tips for Perfect Muffins:

  • Overmixing = dense muffins.
  • For domed tops, start baking at 400°F for 5 minutes, then reduce to 375°F.
  • Sprinkle tops with sugar for bakery-style crunch.

🔄 Variations:

  • Healthy muffins: Replace half the flour with whole wheat and reduce sugar to ½ cup.
  • Lemon muffins: Add 1 tbsp lemon zest + 2 tbsp juice.
  • Cinnamon streusel: Top with butter, sugar, and flour crumble.
