Here’s a classic croquette recipe 🥔🥖 — crispy on the outside, soft and flavorful inside. This version is versatile and works for potato, chicken, ham, or meat croquettes.


Classic Croquettes

Ingredients (makes ~12–15):

Croquette Base

  • 2 cups mashed potatoes (or finely chopped cooked chicken/meat)
  • 2 tbsp butter
  • ¼ cup milk
  • 1 egg yolk
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ tsp garlic powder or nutmeg (optional)
  • 2 tbsp finely chopped onion or parsley

Breading

  • ½ cup flour
  • 2 eggs, beaten
  • 1 cup breadcrumbs (Panko preferred)

For Frying

  • Vegetable oil

Instructions:

  1. Make filling:
    In a bowl, mix mashed potatoes (or meat), butter, milk, egg yolk, seasonings, and herbs. Chill 20–30 minutes so mixture firms up.
  2. Shape croquettes:
    Form into small logs or balls.
  3. Bread:
    Roll each croquette in flour → egg → breadcrumbs.
  4. Chill again (important):
    Refrigerate breaded croquettes 15–20 minutes to help them hold shape.
  5. Fry:
    Heat oil to 350°F (175°C).
    Fry croquettes in batches 2–3 minutes per side until golden brown.
  6. Drain & serve:
    Drain on paper towels. Serve hot.

⭐ Tips for PERFECT croquettes:

  • Cold mixture = better shape.
  • Don’t overcrowd oil.
  • Use Panko for extra crunch.
  • Taste filling before shaping.

  • Chicken croquettes: Add minced cooked chicken + parsley.
  • Ham & cheese: Add diced ham + shredded cheese.
  • Seafood croquettes: Use crab, shrimp, or tuna.
