Palatschinke

Palatschinke 🇦🇹 (Austrian-style thin pancakes / crêpes)

Ingredients (makes ~6–8)

  • 1 cup (125 g) flour
  • 1 cup (240 ml) milk
  • 1 egg
  • Pinch of salt
  • 1 tsp sugar (optional, for sweet version)
  • Butter or oil for the pan

Instructions

  1. Mix batter
    Whisk flour, milk, egg, salt (and sugar if using) until smooth.
    Batter should be thin, like heavy cream. Add a little milk if needed.
  2. Heat pan
    Use a non-stick pan over medium heat. Lightly grease with butter or oil.
  3. Cook
    Pour a small ladle of batter into the pan and swirl to coat thinly.
    Cook ~1 minute until edges lift, flip, cook 30 seconds more.
  4. Repeat
    Stack on a plate and keep warm.

Classic Fillings

Sweet (most traditional):

  • Apricot jam (Marillenmarmelade) ⭐
  • Powdered sugar + lemon juice
  • Nutella or chocolate spread
  • Quark or sweetened ricotta

Savory:

  • Ham & cheese
  • Spinach & cheese
  • Mushrooms & cream sauce

Roll or fold and serve warm 😋
