Palatschinke 🇦🇹 (Austrian-style thin pancakes / crêpes)
Ingredients (makes ~6–8)
- 1 cup (125 g) flour
- 1 cup (240 ml) milk
- 1 egg
- Pinch of salt
- 1 tsp sugar (optional, for sweet version)
- Butter or oil for the pan
Instructions
- Mix batter
Whisk flour, milk, egg, salt (and sugar if using) until smooth.
Batter should be thin, like heavy cream. Add a little milk if needed. - Heat pan
Use a non-stick pan over medium heat. Lightly grease with butter or oil. - Cook
Pour a small ladle of batter into the pan and swirl to coat thinly.
Cook ~1 minute until edges lift, flip, cook 30 seconds more. - Repeat
Stack on a plate and keep warm.
