🥥 Coconut Cake

🧾 Ingredients (8–10 servings)

For the Cake:

  • 2 ½ cups all-purpose flour
  • 2 ½ tsp baking powder
  • ½ tsp salt
  • 1 cup unsalted butter, softened
  • 2 cups sugar
  • 4 large eggs
  • 1 tsp vanilla extract
  • 1 tsp coconut extract (optional, for extra flavor)
  • 1 cup coconut milk (or regular milk)
  • 1 cup sweetened shredded coconut

For the Frosting:

  • 1 cup unsalted butter, softened
  • 3–4 cups powdered sugar
  • ¼ cup coconut milk (or regular milk)
  • 1 tsp vanilla extract
  • 1 tsp coconut extract (optional)
  • ½–1 cup shredded coconut for topping

👩‍🍳 Instructions

1️⃣ Bake the Cake

  1. Preheat oven to 175 °C / 350 °F.
  2. Grease and flour two 9-inch round cake pans.
  3. In a bowl, whisk together flour, baking powder, and salt.
  4. In a large bowl, cream butter and sugar until light and fluffy.
  5. Beat in eggs one at a time, then vanilla and coconut extract.
  6. Alternate adding dry ingredients and coconut milk, starting and ending with dry. Mix until smooth.
  7. Fold in shredded coconut.
  8. Divide batter evenly between pans and bake 25–30 minutes or until a toothpick comes out clean.
  9. Let cakes cool completely on a wire rack.

2️⃣ Make the Frosting

  1. Beat butter until creamy.
  2. Gradually add powdered sugar, alternating with coconut milk.
  3. Add vanilla and coconut extract; beat until smooth and fluffy.

3️⃣ Assemble the Cake

  1. Place one cake layer on a serving plate. Spread frosting evenly.
  2. Place second layer on top and frost the top and sides.
  3. Sprinkle shredded coconut over the top and sides.

4️⃣ Serve

  • Slice and enjoy! Store covered at room temperature for 1–2 days or refrigerate up to 4 days.

⭐ Tips

  • Extra coconut flavor: brush each cake layer with a little coconut milk or simple syrup before frosting.
  • For a lighter texture: fold in ½ cup whipped cream into the frosting.
  • Variation: add pineapple bits between layers for a tropical twist.
