Here’s a clear, classic Dobos Torte recipe (the famous Hungarian layered cake with caramel topping). 🍰

🍫 Dobos Torte (Hungarian Chocolate Layer Cake)

🥚 Sponge Cake Layers

  • 150 g (¾ cup) granulated sugar
  • 120 g (1 cup) all-purpose flour, sifted

  1. Preheat oven to 180 °C / 350 °F. Line baking trays with parchment.
  2. Beat egg whites with salt until soft peaks form. Gradually add half the sugar, beating until stiff and glossy.
  3. In another bowl, beat egg yolks with remaining sugar and vanilla until pale and thick.
  4. Gently fold egg whites into yolk mixture.
  5. Fold in sifted flour carefully (don’t deflate).
  6. Divide batter into 6 thin circles (about 20–22 cm / 8–9 in).
  7. Bake each layer 6–8 minutes until lightly golden.
  8. Cool completely.

🍫 Chocolate Buttercream

Ingredients

  • 200 g dark chocolate (60–70%), melted and cooled
  • 200 g unsalted butter, soft
  • 100 g powdered sugar
  • 2 egg yolks
  • 1 tsp vanilla extract

Instructions

  1. Beat butter until pale and fluffy.
  2. Add powdered sugar and beat smooth.
  3. Mix in egg yolks and vanilla.
  4. Slowly beat in melted chocolate until creamy.

🍯 Caramel Topping

Ingredients

  • 150 g (¾ cup) granulated sugar
  • 1–2 tbsp water
  • Butter or oil (for knife)

Instructions

  1. Choose one best sponge layer for the top.
  2. Heat sugar and water in a saucepan until amber caramel forms.
  3. Quickly pour caramel over the sponge layer and spread thinly.
  4. Grease a knife and cut into wedges immediately before it hardens.

⚠️ Caramel is very hot—adult supervision recommended.


🎂 Assembly

  1. Stack 5 sponge layers, spreading chocolate buttercream between each.
  2. Frost sides lightly.
  3. Arrange caramel wedges decoratively on top.
  4. Optional: pipe buttercream rosettes around the edge.

  • Layers must be very thin—that’s the signature of Dobos torte.
  • Work fast with caramel; it hardens quickly.
