Mediterranean Spinach & Feta Crisps

Ingredients (makes about 12–16 crisps)

  • 1 cup cooked spinach, very well drained and finely chopped
  • 1 cup crumbled feta cheese
  • ½ cup shredded mozzarella or Parmesan
  • 1 large egg
  • 1 clove garlic, minced
  • ½ tsp dried oregano
  • ¼ tsp black pepper
  • Optional: pinch of chili flakes or lemon zest

Instructions

  1. Preheat oven
    • 375°F (190°C). Line a baking sheet with parchment paper.
  2. Mix
    • In a bowl, combine spinach, feta, mozzarella/Parmesan, egg, garlic, oregano, pepper, and optional add-ins.
  3. Form crisps
    • Spoon small mounds (about 1½ tbsp) onto the baking sheet.
    • Flatten slightly for crisp edges.
  4. Bake
    • Bake 15–18 minutes, until golden and crispy at the edges.
  5. Cool slightly & serve
    • Let rest 2–3 minutes to firm up.

Tips & Variations

  • Extra crispy: Use all Parmesan instead of mozzarella.
  • Air fryer: Cook at 375°F for 8–10 minutes.
  • Add-ins: Chopped olives, sun-dried tomatoes, or green onions.
  • Dip pairing: Tzatziki, hummus, or garlic yogurt sauce.
