Cauliflower cheese

Here’s a classic Cauliflower Cheese recipe 🥦🧀—creamy, cheesy, and perfect as a side dish for dinner.


Ingredients (serves 4–6)

  • 1 large head of cauliflower, cut into florets
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 1½ cups (360 ml) milk
  • 1 tsp Dijon mustard (optional)
  • 1 cup (100 g) grated cheddar cheese
  • Salt & pepper, to taste
  • Optional: ¼ cup breadcrumbs for topping

Instructions

  1. Cook cauliflower
    • Boil or steam florets until just tender (about 5–7 minutes).
    • Drain and set aside.
  2. Make cheese sauce
    • Melt butter in a saucepan over medium heat.
    • Stir in flour and cook 1–2 minutes to form a roux.
    • Gradually whisk in milk until smooth and thickened.
    • Stir in mustard (if using) and half the cheese. Season with salt and pepper.
  3. Assemble
    • Place cauliflower in a greased baking dish.
    • Pour cheese sauce over cauliflower.
    • Sprinkle remaining cheese on top (and breadcrumbs if using).
  4. Bake
    • Bake at 375°F (190°C) for 20–25 minutes until bubbly and golden on top.
  5. Serve
    • Let cool slightly, then serve as a comforting side.

Tips & Variations

  • Extra cheesy: Mix in Gruyère or Parmesan with cheddar.
  • Creamier: Add a splash of cream or crème fraîche to the sauce.
  • Add herbs: Sprinkle chopped parsley or thyme on top.
  • Low-carb option: Skip breadcrumbs or use crushed pork rinds.
