Asparagus stuffed chicken

Posted on April 8, 2026 by Admin

Here’s a simple and delicious way to make Asparagus-Stuffed Chicken—a healthy, flavorful dish that’s great for lunch or dinner:

🥬 Ingredients

  • 2 large chicken breasts
  • 6–8 asparagus spears, trimmed
  • 50–75g cream cheese or goat cheese (optional for creaminess)
  • 1 clove garlic, minced
  • Salt, pepper, paprika, or Italian herbs
  • Olive oil for cooking

🍳 Instructions

  1. Prepare the chicken:
    • Slice each chicken breast horizontally to create a pocket.
  2. Stuff the chicken:
    • Spread cheese inside the pocket (optional).
    • Place 3–4 asparagus spears inside each breast.
    • Sprinkle garlic, salt, pepper, and herbs over the filling.
  3. Cook:
    • Pan-searing: Heat olive oil in a skillet over medium heat. Sear chicken 3–4 minutes per side, then lower heat and cover until fully cooked (internal temp 75°C / 165°F).
    • Oven-baking: Preheat oven to 200°C (390°F). Place chicken in a baking dish, drizzle with olive oil, and bake for 20–25 minutes.
  4. Serve:
    • Slice the chicken to reveal the asparagus.
    • Pair with roasted vegetables, salad, or quinoa.

💡 Tips

  • Pound the chicken slightly to even thickness for faster, uniform cooking.
  • Use parmesan or shredded mozzarella for extra flavor.
  • Wrap in bacon for a richer taste (optional).

✅ Benefits:

  • High in protein, low in carbs
  • Asparagus adds fiber, vitamins A, C, and K
  • Perfect for weight-conscious or low-carb diets
