🥧 Pecan Pie Cookies (Sweet, Nutty, and Chewy)

A cookie version of classic pecan pie—chewy, buttery, and full of caramelized nut flavor.


Ingredients (about 24 cookies)

Cookie Base:

  • 1 cup butter, softened
  • 1 cup brown sugar
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2½ cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt

Pecan Pie Topping:

  • 1 cup chopped pecans
  • ½ cup brown sugar
  • ¼ cup corn syrup or honey
  • 2 tbsp butter, melted
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven: 175°C / 350°F. Line a baking sheet with parchment paper.
  2. Make cookie dough:
    • Cream butter and sugars until light and fluffy.
    • Beat in eggs and vanilla.
    • Mix in flour, baking soda, and salt until combined.
  3. Form cookies:
    • Scoop 1–2 tbsp dough onto the prepared sheet. Flatten slightly.
  4. Add topping:
    • Mix pecans, brown sugar, corn syrup, melted butter, and vanilla.
    • Spoon a small amount on top of each cookie, pressing lightly.
  5. Bake: 12–15 minutes until cookies are golden and topping is bubbly.
  6. Cool: Let cookies cool on the sheet for 5 minutes, then transfer to a wire rack.

Tips

  • Use lightly toasted pecans for extra flavor.
  • For a softer cookie, bake closer to 12 minutes; for crunchier, 15 minutes.
  • Optional: drizzle melted chocolate over cooled cookies for extra indulgence 🍫
