Mille-feuille

Ah! The Mille-Feuille is a classic French pastry, also called a Napoleon. It’s layers of crispy puff pastry and creamy filling, usually pastry cream, and often topped with icing or powdered sugar. 🍰✨

Classic Mille-Feuille

Ingredients

Puff Pastry Layers:

  • 1 sheet (about 8×8 inches) store-bought puff pastry or homemade
  • Powdered sugar for dusting

Pastry Cream Filling:

  • 2 cups (480 ml) milk
  • ½ cup (100 g) sugar
  • 4 large egg yolks
  • 3 tbsp cornstarch
  • 2 tbsp unsalted butter
  • 1 tsp vanilla extract

Optional Icing:

  • ½ cup powdered sugar
  • 1–2 tsp milk
  • ½ tsp vanilla
  • Optional: melted chocolate for drizzle

Instructions

  1. Prepare puff pastry
    • Preheat oven to 400°F (200°C).
    • Roll puff pastry to even thickness (~1/8 inch) and cut into rectangles.
    • Place on baking sheet lined with parchment and prick lightly with a fork.
    • Bake 12–15 minutes until golden and crisp. Cool completely.
  2. Make pastry cream
    • Heat milk in a saucepan until just simmering.
    • In a bowl, whisk egg yolks, sugar, and cornstarch until smooth.
    • Slowly pour hot milk into yolk mixture, whisking constantly.
    • Return to saucepan and cook over medium heat, stirring until thickened.
    • Remove from heat, stir in butter and vanilla. Cover and cool.
  3. Assemble mille-feuille
    • Place one puff pastry layer on a serving tray.
    • Spread a thick layer of pastry cream.
    • Repeat with second layer and cream, then top with third layer.
  4. Optional icing
    • Mix powdered sugar, milk, and vanilla until smooth.
    • Spread on top layer or drizzle with melted chocolate for decoration.
  5. Chill & serve
    • Chill for at least 1 hour before slicing. Use a serrated knife for clean cuts.

Tips

  • Keep layers crisp: Assemble just before serving or chill but avoid excess moisture.
  • Flavor variations: Add fruit (raspberries, strawberries), chocolate cream, or coffee flavor.
  • Shortcut: You can use store-bought custard or whipped cream for faster assembly.
