Liptauer Cheese Spread

Ingredients

  • 8 oz (225 g) soft cheese (like cream cheese, quark, or ricotta)
  • 2 tbsp butter, softened
  • 2 tsp paprika (sweet or smoked, Hungarian style)
  • 1 tsp mustard (Dijon or spicy brown)
  • 1–2 tbsp chopped pickles or gherkins
  • 1 small shallot or onion, finely minced
  • Salt & black pepper, to taste
  • Optional: a few drops of Worcestershire sauce or cayenne for extra kick

Instructions

  1. Mix base
    • In a bowl, combine soft cheese and butter until smooth.
  2. Add flavorings
    • Stir in paprika, mustard, minced onion/shallot, and chopped pickles.
    • Season with salt, pepper, and optional Worcestershire or cayenne.
  3. Chill
    • Cover and refrigerate at least 30 minutes for flavors to meld.
  4. Serve
    • Spread on fresh bread, rye toast, crackers, or use as a sandwich filling.
    • Garnish with paprika or chopped chives if desired.

  • Cheese choice: Quark gives the most authentic Hungarian taste; cream cheese works well for convenience.
  • Spicy version: Add more mustard or a pinch of hot paprika.
