Creamy Tomato Soup

Ingredients

  • 2 tbsp butter or olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes or whole tomatoes (with juices)
  • 1 cup vegetable or chicken broth
  • ½ cup heavy cream (or milk for lighter)
  • 1 tsp sugar (optional, balances acidity)
  • Salt & black pepper, to taste
  • Optional: pinch of dried basil or Italian seasoning

Instructions

  1. Sauté aromatics
    Heat butter in a pot over medium heat.
    Add onion and cook until soft (4–5 minutes).
    Add garlic and cook 30 seconds.
  2. Simmer
    Add tomatoes, broth, sugar, and seasoning.
    Simmer uncovered 15–20 minutes.
  3. Blend
    Carefully blend until smooth (immersion blender works best).
  4. Finish with cream
    Stir in cream, season with salt and pepper, and heat gently.
  5. Serve
    Top with croutons, extra cream swirl, or grated cheese.

Variations

  • Roasted tomato soup: Roast fresh tomatoes first for deeper flavor
  • Dairy-free: Use coconut milk or oat cream
  • Protein boost: Add white beans before blending
  • Grilled cheese dunker: Thicker soup—use less broth
