🍗 Creamy Chicken and Carrot Spread

Chicken and carrot spread is a flavorful, protein-rich spread perfect for sandwiches, toast, crackers, or wraps. It combines tender chicken, cooked carrots, and a creamy base for a smooth, tasty result.

🥄 Ingredients (serves 4–6)

  • 1 cup cooked chicken, shredded
  • 1/2 cup carrots, boiled and finely grated or mashed
  • 1/4–1/2 cup cream cheese (or Greek yogurt for lighter version)
  • 1–2 tablespoons mayonnaise
  • 1 teaspoon lemon juice
  • Salt and pepper to taste
  • Optional: chopped herbs like parsley or chives, garlic powder

🍽️ Instructions

  1. Prepare ingredients: Shred chicken and mash or grate cooked carrots.
  2. Mix base: In a bowl, combine cream cheese and mayonnaise until smooth.
  3. Add chicken & carrots: Stir in shredded chicken, carrots, lemon juice, salt, pepper, and optional herbs.
  4. Blend (optional): For extra smooth texture, pulse mixture in a food processor.
  5. Chill: Refrigerate for 30–60 minutes for flavors to meld.
  6. Serve: Spread on bread, crackers, or use as a dip for vegetables.

💡 Tips

  • Make ahead: Keeps 2–3 days in the fridge.
  • Texture variation: Leave some carrot chunks for a bit of crunch.
  • Flavor boost: Add a pinch of smoked paprika, mustard, or finely chopped onions.

I can also provide a super quick 5-minute version using rotisserie chicken and pre-grated carrots, perfect for a last-minute snack or lunch.

Do you want me to do that?
