🥩 Seared Steak

Ingredients (1–2 servings)

  • 1 steak (ribeye, sirloin, or filet; 1–1.5 inches thick)
  • Salt & black pepper
  • 1–2 tbsp oil (vegetable or canola)
  • 1–2 tbsp butter (optional)
  • 1–2 garlic cloves, smashed (optional)
  • Fresh herbs like rosemary or thyme (optional)

Instructions

  1. Prep steak
    • Pat dry with paper towels.
    • Season generously with salt and pepper.
    • Let it sit at room temperature for 20–30 minutes.
  2. Heat pan
    • Use a heavy skillet (cast iron is ideal).
    • Heat over high heat until very hot.
  3. Sear steak
    • Add oil to pan.
    • Place steak in pan without moving it.
    • Cook 3–5 min per side for medium-rare (depending on thickness).
    • Optional: add butter, garlic, and herbs, and spoon melted butter over steak.
  4. Rest
    • Remove steak and let rest 5–10 min.
    • This keeps juices inside.
  5. Serve
    • Slice against the grain for tenderness.

  • Don’t overcrowd the pan; sear in batches if needed.
  • Check doneness:
    • Rare: 120–125°F
    • Medium-rare: 130–135°F
    • Medium: 140–145°F
