Stuffed peppers

Here’s a simple and delicious stuffed peppers recipe 🌶️🧀—you can make it with rice, veggies, and/or meat.


🌶️ Stuffed Peppers

Ingredients (4 servings)

  • 4 large bell peppers (any color)
  • 1 cup cooked rice (white, brown, or quinoa)
  • 1 cup cooked meat (ground beef, chicken, or turkey) or beans for vegetarian
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup tomato sauce (plus extra for topping)
  • ½ cup shredded cheese (cheddar, mozzarella, or your choice)
  • Salt & pepper to taste
  • Optional herbs: parsley, oregano, or basil

Instructions

  1. Prep peppers
    • Cut tops off and remove seeds.
    • Blanch in boiling water 2–3 minutes (optional, softens peppers).
  2. Make filling
    • Sauté onion and garlic until soft.
    • Add cooked meat or beans, rice, tomato sauce, and seasonings.
    • Mix well.
  3. Stuff peppers
    • Spoon filling into each pepper.
    • Top with extra tomato sauce and shredded cheese.
  4. Bake
    • Preheat oven to 375°F (190°C).
    • Place peppers in a baking dish with ¼ cup water at the bottom.
    • Cover with foil and bake 25–30 minutes.
    • Remove foil and bake another 10 minutes until cheese is melted and slightly golden.

🔥 Air Fryer Option

  • Temp: 360°F (182°C)
  • Time: 15–20 minutes covered, then 5 minutes uncovered to melt cheese

⭐ Tips & Variations

  • Vegetarian: use lentils, chickpeas, or tofu instead of meat
  • Cheesy twist: mix cheese inside filling too
  • Spicy: add chili flakes or jalapeños
  • Meal prep: these keep in fridge 3–4 days and reheat well
