🌶️ Stuffed Peppers
Ingredients (4 servings)
- 4 large bell peppers (any color)
- 1 cup cooked rice (white, brown, or quinoa)
- 1 cup cooked meat (ground beef, chicken, or turkey) or beans for vegetarian
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 cup tomato sauce (plus extra for topping)
- ½ cup shredded cheese (cheddar, mozzarella, or your choice)
- Salt & pepper to taste
- Optional herbs: parsley, oregano, or basil
Instructions
- Prep peppers
- Cut tops off and remove seeds.
- Blanch in boiling water 2–3 minutes (optional, softens peppers).
- Make filling
- Sauté onion and garlic until soft.
- Add cooked meat or beans, rice, tomato sauce, and seasonings.
- Mix well.
- Stuff peppers
- Spoon filling into each pepper.
- Top with extra tomato sauce and shredded cheese.
- Bake
- Preheat oven to 375°F (190°C).
- Place peppers in a baking dish with ¼ cup water at the bottom.
- Cover with foil and bake 25–30 minutes.
- Remove foil and bake another 10 minutes until cheese is melted and slightly golden.

- Temp: 360°F (182°C)
- Time: 15–20 minutes covered, then 5 minutes uncovered to melt cheese
