Ingredients (serves 2–4)

For the shrimp:

  • 1 lb (450 g) large shrimp, peeled and deveined
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • ¼ cup grated Parmesan cheese
  • ½ tsp red pepper flakes (adjust for spice)
  • ½ tsp smoked paprika (optional)
  • Salt & pepper, to taste
  • Juice of ½ lemon

For the lemon-herb aioli:

  • ¼ cup mayonnaise
  • 1 clove garlic, minced
  • 1 tsp lemon juice
  • 1 tsp lemon zest
  • 1 tsp chopped fresh parsley or chives
  • Salt & pepper, to taste

Instructions

1. Make the aioli

  1. In a small bowl, combine mayonnaise, garlic, lemon juice, lemon zest, parsley, salt, and pepper.
  2. Mix well and refrigerate until ready to serve.

2. Prepare the shrimp

  1. In a bowl, toss shrimp with olive oil, minced garlic, Parmesan, red pepper flakes, smoked paprika, salt, pepper, and lemon juice.
  2. Let marinate 10–15 minutes while you preheat the grill.

3. Grill the shrimp

  1. Preheat grill or grill pan to medium-high heat.
  2. Thread shrimp onto skewers (optional for easier grilling).
  3. Grill shrimp 2–3 minutes per side, until pink, opaque, and slightly charred.

4. Serve

  • Drizzle with extra lemon juice if desired.
  • Serve immediately with lemon-herb aioli on the side for dipping.

Tips

  • Extra spicy: Add a pinch of cayenne pepper or hot sauce to the marinade.
  • Oven or stovetop alternative: Sear shrimp in a hot skillet for 2–3 minutes per side.
  • Serving ideas: Over pasta, in tacos, on a salad, or with garlic bread.
