Scampi shrimp

🦐 Shrimp Scampi (Garlic Butter Shrimp)

Quick, flavorful, and perfect with pasta, rice, or crusty bread.


Ingredients (4 servings)

  • 450 g (1 lb) shrimp, peeled & deveined
  • 4 tbsp butter
  • 2 tbsp olive oil
  • 4–5 cloves garlic, minced
  • ¼ tsp salt
  • ¼ tsp black pepper
  • Optional: pinch of chili flakes
  • 2 tbsp lemon juice
  • 2 tbsp chopped parsley

Instructions

  1. Heat pan:
    • Heat olive oil and butter in a large pan over medium heat.
  2. Cook garlic:
    • Add garlic (and chili flakes if using). Cook 30 seconds until fragrant (don’t brown).
  3. Cook shrimp:
    • Add shrimp in a single layer.
    • Cook 2–3 minutes per side until pink and opaque.
    • Season with salt and pepper.
  4. Finish:
    • Add lemon juice and parsley. Toss gently.
    • Remove from heat immediately.
  5. Serve:
    • Serve over pasta, rice, or with bread to soak up the sauce.

Tips

  • Don’t overcook shrimp—they cook fast and stay tender when just done.
  • Add a splash of pasta water if serving with noodles for a silky sauce.
  • You can add cherry tomatoes or spinach for extra color 🍅🌿
