Perfect! Here’s the Slow Cooker French Onion Meatloaf with Soup-Style Sauce—it’s like French onion soup poured over tender meatloaf for maximum flavor 🧅🍖🥣

Slow Cooker French Onion Meatloaf with Soup-Style Sauce

Makes 6 servings

Ingredients

For the Meatloaf

  • 1½ lbs ground beef (or mix beef & pork)
  • 1 cup breadcrumbs
  • 1 small onion, finely chopped
  • 1 cup caramelized onions (or store-bought)
  • 2 cloves garlic, minced
  • 1 large egg
  • ½ cup milk
  • 1 tsp Worcestershire sauce
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp dried thyme (optional)

For the Soup-Style Sauce

  • 1 can (10 oz) French onion soup (or homemade)
  • ½ cup beef broth
  • 1 tbsp Worcestershire sauce
  • ½ cup shredded Gruyère or Swiss cheese (optional)
  • 1 tsp balsamic vinegar (optional, enhances onion flavor)

Instructions

1. Caramelize Onions (if not pre-cooked)

  1. Slice 1 cup of onions thinly.
  2. Heat 1 tbsp butter and 1 tsp oil in a skillet over medium-low heat.
  3. Cook onions slowly, stirring occasionally, 15–20 minutes until golden and sweet.

2. Make Meatloaf

  1. In a large bowl, combine ground beef, breadcrumbs, chopped onion, garlic, egg, milk, Worcestershire sauce, salt, pepper, thyme, and caramelized onions.
  2. Mix gently, being careful not to overwork.

3. Shape & Place in Slow Cooker

  • Shape mixture into a loaf and place in the slow cooker.

4. Make Soup-Style Sauce

  • In a bowl, mix French onion soup, beef broth, Worcestershire sauce, and balsamic vinegar.
  • Pour evenly over the meatloaf.

5. Cook

  • Cover and cook on low 4–5 hours or high 2–3 hours until meatloaf is fully cooked and tender.

6. Add Cheese (Optional)

  • About 30 minutes before done, sprinkle shredded Gruyère or Swiss cheese on top and cover to melt.

7. Serve

  • Remove meatloaf carefully.
  • Slice and serve with the rich onion sauce from the slow cooker.
  • Perfect with mashed potatoes, roasted veggies, or crusty bread to soak up the sauce.

Tips

  • Extra veggies: Add mushrooms or bell peppers to the meatloaf or sauce for more flavor.
  • Make-ahead: Prepare the meatloaf mixture the night before for easy assembly.
  • Thicker sauce: Mix 1 tsp cornstarch with 1 tbsp water and stir into the sauce 20–30 minutes before serving.

If you want, I can also give a quick version for the oven that mimics this soup-style slow cooker meatloaf but is ready in about an hour.

Do you want me to do that?
