Crumb cake

🍰 Crumb Cake (Soft Cake with Crunchy Topping)

A classic dessert with a soft base and sweet, buttery crumb topping—perfect for coffee or tea time.


Ingredients (8 servings)

Cake:

  • 1½ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ¾ cup sugar
  • ½ cup butter, softened
  • 2 eggs
  • ½ cup milk
  • 1 tsp vanilla extract

Crumb Topping:

  • ½ cup all-purpose flour
  • ½ cup sugar
  • ¼ cup butter, cold and cubed
  • 1 tsp cinnamon (optional)

Instructions

  1. Preheat oven: 180°C / 350°F. Grease and flour a baking pan.
  2. Make cake batter:
    • Beat butter and sugar until fluffy.
    • Add eggs one at a time, then vanilla.
    • Mix in flour, baking powder, baking soda, salt, and milk until smooth.
  3. Make crumb topping:
    • Combine flour, sugar, and cinnamon.
    • Cut in cold butter until mixture resembles coarse crumbs.
  4. Assemble cake:
    • Pour batter into the pan.
    • Sprinkle crumb topping evenly over the cake.
  5. Bake: 35–40 minutes until a toothpick comes out clean.
  6. Cool & serve: Slice and enjoy warm or at room temperature.

Tips

  • Add chopped nuts or chocolate chips to the topping for extra flavor.
  • Serve with a dusting of powdered sugar or a drizzle of glaze.
  • For a mini crumb cake version, bake in muffin tins 18–20 minutes.
