Chicken and rice

Here’s a simple, tasty chicken and rice recipe you can make in one pan 🍗🍚

Easy One-Pan Chicken and Rice

Ingredients

  • 2 chicken breasts (or 4 thighs)
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon paprika (optional)
  • ½ teaspoon dried thyme or Italian seasoning

Instructions

  1. Season the chicken
    Sprinkle both sides with salt, pepper, paprika, and thyme.
  2. Sear the chicken
    Heat oil in a large pan over medium heat.
    Cook chicken 4–5 minutes per side until golden (not fully cooked).
    Remove and set aside.
  3. Cook aromatics
    In the same pan, sauté onion for 2–3 minutes.
    Add garlic and cook 30 seconds.
  4. Add rice
    Stir in uncooked rice and toast for 1 minute.
  5. Simmer
    Pour in chicken broth and stir.
    Place chicken back on top.
    Cover and simmer on low for 18–22 minutes until rice is tender and chicken is cooked through.
  6. Rest & serve
    Let sit covered for 5 minutes. Fluff rice and serve.

Optional Add-Ins

  • Frozen peas or carrots (add in last 5 minutes)
  • Squeeze of lemon before serving
  • Sprinkle of fresh parsley
  • Add a little butter at the end for richer flavor
