🍪 Caramel Chocolate Cracker Cookies

🧾 Ingredients

  • 35–40 saltine crackers (or any plain crackers)
  • 1 cup (225g) unsalted butter
  • 1 cup brown sugar (packed)
  • 2 cups chocolate chips (milk or semi-sweet)
  • Optional toppings:
    • Crushed nuts (almonds, pecans)
    • Sprinkles
    • Sea salt

👩‍🍳 Instructions

  1. Preheat oven to 180°C (350°F).
    Line a baking tray with parchment paper or foil.
  2. Arrange crackers
    Place crackers in a single layer, covering the tray completely.
  3. Make caramel
    In a saucepan, melt butter and brown sugar together.
    Bring to a boil and let it cook for 3–4 minutes, stirring constantly until thick and bubbly.
  4. Pour & bake
    Pour the hot caramel evenly over the crackers.
    Bake for 5–7 minutes until bubbly.
  5. Add chocolate
    Remove from oven and immediately sprinkle chocolate chips on top.
    Let sit for 2–3 minutes, then spread melted chocolate evenly.
  6. Top it off
    Add nuts, sprinkles, or a pinch of sea salt if you like.
  7. Cool & break
    Let it cool completely (or refrigerate for faster setting).
    Break into pieces and enjoy!

💡 Tips

  • Use digestive biscuits if saltines aren’t available in your area.
  • Don’t overcook the caramel—it can turn bitter.
  • Store in an airtight container for up to a week.
