Pecan pie muffins 🧁 are like mini pecan pies—sweet, nutty, and soft in the middle. Here’s an easy, no-mixer recipe.


Pecan Pie Muffins

Ingredients

  • 1 cup chopped pecans
  • 1 cup brown sugar
  • ½ cup flour
  • 2 eggs
  • ½ cup melted butter
  • 1 teaspoon vanilla
  • Pinch of salt

Instructions

  1. Heat oven to 175°C / 350°F. Line a muffin pan.
  2. In a bowl, mix brown sugar, eggs, melted butter, and vanilla.
  3. Stir in flour and salt.
  4. Fold in chopped pecans.
  5. Fill muffin cups about ž full.
  6. Bake 18–22 minutes, until set and lightly golden.
  7. Cool slightly before eating (they firm up as they cool).

Tips & Variations

  • Add chocolate chips for extra sweetness
  • Sprinkle a few whole pecans on top before baking
  • Serve warm with a little whipped cream or ice cream
