Easy Rosemary Chicken

Ingredients (serves 3–4)

  • 4 boneless, skinless chicken breasts (or thighs)
  • 2 tbsp olive oil
  • 2–3 sprigs fresh rosemary (or 1 tsp dried)
  • 2 cloves garlic, minced
  • Salt & pepper to taste
  • Optional: lemon slices for extra flavor

Instructions

  1. Prep the chicken:
    • Pat chicken dry with a paper towel.
    • Rub with olive oil, garlic, salt, pepper, and rosemary.
  2. Cook the chicken:
    • Stovetop method:
      • Heat a skillet over medium-high heat.
      • Cook chicken 6–7 minutes per side, until golden and cooked through (internal temp 165°F / 74°C).
    • Oven method:
      • Preheat oven to 375°F (190°C).
      • Place chicken in a baking dish and bake 25–30 minutes until fully cooked.
  3. Serve:
    • Optional: garnish with lemon slices and extra rosemary.
    • Serve with rice, potatoes, or vegetables.

  • Crispier skin: Sear chicken in skillet first, then finish in the oven.
  • Flavor boost: Add a splash of chicken broth or white wine when baking.
  • Quick version: Use rosemary, garlic, and olive oil as a marinade for 15 minutes before cooking.
