Cranberry bread

Cranberry Bread is a moist, slightly sweet quick bread with a tangy flavor from Cranberry. It’s often enjoyed for breakfast, tea time, or around Thanksgiving and Christmas. 🍞🍒

Ingredients

  • 2 cups All-Purpose Flour
  • 1 cup Sugar
  • 1½ tsp Baking Powder
  • ½ tsp Salt
  • ¾ cup Orange Juice
  • 1 tbsp Orange Zest
  • 2 tbsp Butter, melted
  • 1 Egg
  • 1½ cups fresh or frozen cranberries
  • Optional: ½ cup Walnut or Pecan

Instructions

  1. Preheat oven to 175°C (350°F) and grease a loaf pan.
  2. In a bowl, mix flour, sugar, baking powder, and salt.
  3. In another bowl, mix orange juice, orange zest, melted butter, and egg.
  4. Combine wet and dry ingredients until just mixed.
  5. Fold in cranberries and optional nuts.
  6. Pour batter into the loaf pan.
  7. Bake 50–60 minutes until a toothpick comes out clean.
  8. Cool for 10–15 minutes before slicing.

Tips

  • For extra sweetness, add a light Powdered Sugar glaze on top.
  • Dried cranberries can be used if fresh ones aren’t available.
  • Tastes great toasted with Butter.
