No-bake eclair cake

No-Bake Éclair Cake is a quick dessert that tastes like a classic Chocolate Éclair, but it’s made in layers and doesn’t require an oven. 🍫🍰 It’s creamy, sweet, and very easy to prepare.

Ingredients

  • 2 boxes Vanilla Pudding (instant)
  • 3 cups cold milk
  • 1 tub Whipped Topping (like Cool Whip)
  • 1 box Graham Crackers
  • 1 cup Chocolate Frosting

Instructions

  1. Make the filling
    In a bowl, whisk the vanilla pudding mix with cold milk until thick.
  2. Add whipped topping
    Fold the whipped topping into the pudding mixture until smooth and fluffy.
  3. Layer the cake
    • Place a layer of graham crackers in the bottom of a baking dish.
    • Spread half of the pudding mixture over the crackers.
    • Add another layer of graham crackers.
    • Spread the remaining pudding mixture.
    • Finish with a final layer of graham crackers.
  4. Add chocolate topping
    Warm the chocolate frosting slightly so it spreads easily, then spread it over the top layer.
  5. Chill
    Refrigerate for 6–8 hours or overnight so the crackers soften into a cake-like texture.

Tips

  • Best when chilled overnight. ❄️
  • You can add sliced Banana or Strawberry between layers for extra flavor.
  • Serve cold for the perfect creamy texture.
