Ingredients (4–6 servings)

  • 1 lb smoked sausage, sliced into 1-inch pieces (Andouille, Kielbasa, or your favorite smoked sausage)
  • 4 cups fresh or frozen corn kernels (about 4 ears or 2 bags frozen)
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped (optional)
  • 1 cup chicken broth
  • 1 tsp paprika
  • 1/2 tsp black pepper
  • 1/2 tsp salt (adjust to taste)
  • 2 tbsp butter (optional, for richness)
  • Fresh parsley for garnish

Instructions

  1. Prep the slow cooker
    • Add onion, garlic, bell pepper, and corn to the bottom of the slow cooker.
  2. Add sausage and seasoning
    • Place sliced smoked sausage on top of the vegetables.
    • Sprinkle with paprika, salt, and pepper.
    • Pour chicken broth over everything.
  3. Cook
    • Low setting: 4–6 hours
    • High setting: 2–3 hours
    • The sausage will be tender and the corn cooked through.
  4. Finish
    • Stir in butter if desired for extra richness.
    • Taste and adjust seasoning.
    • Garnish with chopped parsley before serving.
  5. Serve
    • Great on its own, over rice, or with crusty bread.
