Ingredients
- 3–4 lb chuck roast
- Salt & pepper
- 1–2 tbsp oil
- 1 onion, chopped
- 3–4 carrots, chunked
- 3–4 potatoes, chunked
- 3 cups beef broth
- 2 cloves garlic (or 1 tsp garlic powder)
- Optional: thyme, rosemary, bay leaf
Steps
- Season & sear the roast with salt and pepper. Brown it in a hot pot with oil (2–3 minutes per side).
- Add veggies around the meat.
- Pour in broth and add garlic and herbs.
- Cook low & slow
- Oven: cover and bake at 300°F (150°C) for 3–4 hours, or
- Slow cooker: 8 hours on low.
- Serve when the meat is fork-tender. Use the juices as gravy.
