🧾 Ingredients (Serves 4)

For the Fries:

  • 1½–2 lbs frozen French fries (or fresh-cut potatoes)
  • Oil for frying (if not baking)
  • Salt to taste

For the Crawfish Topping:

  • 1 lb cooked crawfish tails (peeled)
  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • ½ cup diced onion
  • ½ cup diced bell pepper
  • 1 cup heavy cream
  • ½ cup shredded cheddar or Monterey Jack cheese
  • ½ teaspoon Cajun seasoning (or to taste)
  • ¼ teaspoon paprika
  • Salt & black pepper to taste
  • Optional: dash of hot sauce

Garnish:

  • Sliced green onions
  • Fresh parsley

1️⃣ Cook the Fries

  • Bake or fry according to package instructions until crispy.
  • Salt lightly while hot.

2️⃣ Make Crawfish Sauce

  1. Melt butter in a skillet over medium heat.
  2. Sauté onion, bell pepper, and garlic until soft.
  3. Stir in crawfish tails and cook 2–3 minutes.
  4. Add cream, Cajun seasoning, paprika, salt, and pepper.
  5. Simmer 3–5 minutes until slightly thickened.
  6. Stir in cheese until melted and creamy.

3️⃣ Assemble

  • Spread hot fries on a serving platter.
  • Spoon creamy crawfish mixture over the top.
  • Garnish with green onions and parsley.

🔥 Tips

  • Add crumbled bacon for extra flavor.
  • Make it spicier with more Cajun seasoning or hot sauce.
  • For extra richness, drizzle with a little melted queso.
