Water kefir

Water kefir is a lightly fizzy, naturally fermented drink made by culturing sugar water with water kefir grains, which are a symbiotic colony of bacteria and yeast (SCOBY). It’s dairy-free, probiotic-rich, and a refreshing alternative to soda.


Key Components

1️⃣ Water Kefir Grains

  • Gel-like clusters of bacteria and yeast
  • Feed on sugar during fermentation to produce carbonation and probiotics

2️⃣ Sugar Water

  • White, brown, or cane sugar dissolved in water
  • Provides food for the grains during fermentation

3️⃣ Optional Flavorings

  • Fruits: lemon, berries, or orange slices
  • Herbs/spices: ginger, mint, or cinnamon
  • Juice added for a secondary fermentation to enhance flavor and fizz

How to Make Water Kefir

  1. Prepare sugar water and add water kefir grains.
  2. Ferment at room temperature for 24–48 hours.
  3. Strain out the grains (they can be reused).
  4. Optional: add fruit/juice and ferment a second time for carbonation and flavor.
  5. Refrigerate and enjoy chilled.
