Water kefir

Water kefir is a naturally fermented, lightly effervescent beverage made by culturing sugar water with water kefir grains, which are a symbiotic culture of bacteria and yeast (SCOBY). It’s a probiotic drink, meaning it contains beneficial microbes that can support gut health.


Key Components

1️⃣ Water Kefir Grains

  • Gelatinous, crystal-like clusters of bacteria and yeast
  • Feed on sugar to produce fermentation
  • Not made from dairy, unlike milk kefir

2️⃣ Sugar Water

  • Plain water with sugar (white, brown, or cane sugar)
  • Sugar is consumed by the grains during fermentation

3️⃣ Optional Flavorings

  • Fruit (lemon, berries, or orange slices)
  • Herbs or spices (ginger, mint, or cinnamon)
  • Juice added after fermentation for flavor and secondary fermentation

How It’s Made

  1. Dissolve sugar in water and add water kefir grains.
  2. Let ferment at room temperature for 24–48 hours.
  3. Strain out the grains (which can be reused for the next batch).
  4. Optional: add fruit or juice for a second fermentation to develop flavor and natural carbonation.
  5. Refrigerate and enjoy a fizzy, slightly sweet probiotic beverage.
