Sizzling Scallops with Zesty Lime Cilantro Sauce

Ingredients (serves 2–3)

For the scallops:

  • 12 large sea scallops, patted dry
  • Salt & pepper, to taste
  • 2 tbsp olive oil or butter

For the zesty lime cilantro sauce:

  • ¼ cup fresh cilantro leaves
  • 2 tbsp lime juice (about 1 lime)
  • 1 clove garlic
  • 2 tbsp olive oil
  • 1 tsp honey or agave (optional, for balance)
  • Salt & pepper, to taste

Optional garnish:

  • Lime wedges
  • Chopped cilantro

Instructions

  1. Prepare sauce
    • In a blender or food processor, combine cilantro, lime juice, garlic, olive oil, honey, salt, and pepper. Blend until smooth. Taste and adjust seasoning. Set aside.
  2. Sear scallops
    • Heat a skillet over high heat. Add olive oil or butter.
    • Season scallops with salt and pepper.
    • Sear scallops 2–3 minutes per side until golden brown and just cooked through. Do not overcrowd the pan.
  3. Sizzle & serve
    • For extra presentation, you can drizzle a little sauce on a hot skillet, then add scallops so they “sizzle” when served.
    • Drizzle remaining sauce over the scallops.
    • Garnish with chopped cilantro and lime wedges.

Tips & Variations

  • Dry scallops: Pat them very dry before searing to get a nice golden crust.
  • Searing pan: Cast-iron works best for that sizzling effect.
  • Add heat: Include a pinch of red pepper flakes in the sauce.
  • Side ideas: Serve with rice, roasted vegetables, or a fresh salad.
  • Make-ahead: Sauce can be made a day ahead; store in the fridge.
