- Salt & pepper, to taste
- 2 tbsp olive oil or butter
For the zesty lime cilantro sauce:
- ¼ cup fresh cilantro leaves
- 2 tbsp lime juice (about 1 lime)
- 1 clove garlic
- 2 tbsp olive oil
- 1 tsp honey or agave (optional, for balance)
- Salt & pepper, to taste
Optional garnish:
- Lime wedges
- Chopped cilantro
Instructions
- Prepare sauce
- In a blender or food processor, combine cilantro, lime juice, garlic, olive oil, honey, salt, and pepper. Blend until smooth. Taste and adjust seasoning. Set aside.
- Sear scallops
- Heat a skillet over high heat. Add olive oil or butter.
- Season scallops with salt and pepper.
