🥬 Bok Choy with Ginger Chili Sauce

Ingredients

  • 1 lb bok choy (baby or regular), washed and halved or quartered
  • 2 tbsp vegetable oil
  • 3 cloves garlic, minced
  • 1-inch piece ginger, minced or grated
  • 1–2 red chilies, sliced (adjust to taste)
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar or lime juice
  • 1 tsp sugar
  • 1 tsp sesame oil
  • Optional: sesame seeds for garnish

Instructions

  1. Prepare Sauce
    • In a small bowl, mix soy sauce, rice vinegar, sugar, sesame oil, ginger, garlic, and chilies. Set aside.
  2. Cook Bok Choy
    • Heat vegetable oil in a large skillet or wok over medium-high heat.
    • Add bok choy stems first and stir-fry 2–3 minutes.
    • Add leaves and cook another 1–2 minutes until wilted but still bright green.
  3. Add Sauce
    • Pour the prepared ginger chili sauce over bok choy.
    • Toss to coat evenly and cook 1–2 minutes until heated through.
  4. Serve
    • Transfer to a plate, sprinkle with sesame seeds if desired, and serve hot.

Tips

  • Adjust chili to your heat preference.
  • Add a splash of water if you want a little extra sauce.
  • Pairs well with steamed rice or grilled protein like chicken or tofu.
  • For extra flavor, drizzle a little hoisin or oyster sauce into the sauce mix.
