Here’s a simple and fluffy Pancake recipe—perfect for breakfast or brunch 🥞✨


Fluffy Pancakes

Ingredients (makes about 6 pancakes)

  • 1 cup all-purpose flour
  • 2 tbsp sugar
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 1 cup milk
  • 1 large egg
  • 2 tbsp melted butter (plus extra for cooking)
  • 1 tsp vanilla extract (optional)

Instructions

  1. Mix dry ingredients
    • In a bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  2. Mix wet ingredients
    • In another bowl, whisk milk, egg, melted butter, and vanilla extract.
  3. Combine
    • Pour wet ingredients into dry ingredients and gently mix until just combined.
    • Batter should be slightly lumpy—don’t overmix.
  4. Cook pancakes
    • Heat a non-stick skillet or griddle over medium heat and lightly grease with butter.
    • Pour ¼ cup batter for each pancake. Cook 2–3 minutes until bubbles form on top, then flip and cook 1–2 more minutes until golden.
  5. Serve
    • Stack pancakes and top with maple syrup, fruit, butter, or your favorite toppings.

Tips & Variations

  • Extra fluffy: Separate egg; beat the white to stiff peaks and fold in gently.
  • Add-ins: Blueberries, chocolate chips, or mashed banana.
  • Whole wheat version: Substitute half or all of the flour with whole wheat flour.
  • Savory pancakes: Omit sugar and add herbs, cheese, or finely chopped vegetables.
