š 7-UP Cake (Old-Fashioned Pound Cake)
Ingredients
- 3 cups all-purpose flour
- 3 cups sugar
- 5 large eggs, room temp
- 1½ cups unsalted butter, softened
- ¾ cup 7-UP (room temp, not flat)
- 2 tsp lemon extract (or 1 tsp lemon + 1 tsp vanilla)
- ½ tsp salt
Glaze (optional but highly encouraged)
- 2 cups powdered sugar
- 2ā3 tbsp 7-UP
- 1 tsp lemon juice or extract
Instructions
- Preheat oven to 325°F (165°C). Grease and flour a bundt or tube pan really well.
- Cream butter and sugar until light and fluffy (donāt rush thisāabout 4ā5 minutes).
- Add eggs one at a time, mixing well after each.
- Mix in lemon extract and salt.
- Alternate adding flour and 7-UP, starting and ending with flour. Mix just until combined.
- Pour batter into pan and smooth the top.
- Bake 70ā80 minutes, until a toothpick comes out clean.
- Cool in pan 10ā15 minutes, then turn out.
