🍋 7-UP Cake (Moist, Light & Citrusy)
A classic Southern-style cake that’s tender and fluffy, with a bright lemon-lime flavor from 7-UP soda.
Ingredients (1 bundt or tube cake)
Cake
- 1 cup (225 g) butter, softened
- 3 cups sugar
- 5 large eggs
- 3 cups all-purpose flour
- ½ tsp baking powder
- 1 cup 7-UP (or lemon-lime soda)
- 2 tsp lemon extract (or vanilla)
Glaze (optional but recommended)
- 1½ cups powdered sugar
- 2–3 tbsp 7-UP
- 1 tsp lemon juice
Instructions
- Preheat oven:
- 165°C / 325°F
- Grease and flour a bundt or tube pan very well.
- Cream butter & sugar:
- Beat until light and fluffy (4–5 minutes).
- Add eggs:
- Add eggs one at a time, beating well after each.
- Add dry ingredients & soda:
- Mix flour and baking powder.
- Add flour alternately with 7-UP, beginning and ending with flour.
- Stir in lemon extract.
- Bake:
- Pour batter into pan.
- Bake 70–80 minutes, until a toothpick comes out clean.
- Make glaze:
- Mix powdered sugar, 7-UP, and lemon juice until smooth.
- Finish:
- Drizzle glaze over warm cake.
- Let cool completely before slicing.
Tips
- Room-temperature ingredients give the best texture
- Don’t overmix after adding flour
